The Amish Canning Cookbook by Georgia Varozza is a guide to canning simple and delicious foods. She explains in detail how to can using the methods for the water-bath and the pressure cooker.

A variety of recipes are included in this book. There are recipes that use fruits, vegetables, and meat. Inside the pages you will find out how to can jellies, soups, pie
fillings and more. There is a chapter devoted to canning using tomatoes. The ingredients used in this cookbook are probably already in your pantry or can easily be found at the grocery store. This cookbook has no pictures. It doesn’t need them. The author gives easy to understand and carry out instructions for each recipe. There is even a helpful section on troubleshooting canning problems.

The guidelines for canning safely have changed over the years. If you are using your grandmother’s favorite recipe for canning tomatoes it may be outdated. The author cannot stress enough to read the updated canning guidelines. There is a lot of information packed into this cookbook. I learned a few things that I did not know, such as using Tattler reusable lids. I can food occasionally but I never heard of Tattler reusable lids that can last twenty years or more.

The Amish Canning Cookbook is a great resource to add to your cookbook collection. The author, Georgia Varozza, has made canning food easy and accessible to everyone. If you already are a pro at canning she’ll give you up to date advice so that you are doing it safely.
