Homemade Mixes ~ Old Fashioned Funnel Cakes


Sometimes they fit in a jar, Sometimes they don't!

Old Fashioned Funnel Cakes
2 cups flour
1/4 cup packed brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup confectioners' sugar (sealed in a small bag)

Additional Ingredients:
2 eggs, lightly beaten
1 1/2 cups milk
oil for deep-fat frying

In a quart jar, layer Old Fashioned Funnel Cakes ingredients. Be sure to put the confectioners' sugar in a bag because it will be used after the funnel cakes are fried.

Attach a tag with the following instructions: In a bowl, beat the eggs and and milk with a whisk until blended. Add dry ingredients, except confectioners sugar, from the jar and mix well. Heat oil to 375 degrees F. Use finger to cover bottom of a funnel; add 1/2 cup of batter to funnel. Remove finger and move the funnel in a spiral motion until all the batter is gone. You can also use a 1/2 cup measuring cup. Fry 2 minutes on each side or until golden brown. Drain on paper towels. Dust with confectioners' sugar; serve warm. Repeat with remaining batter.
