One-Month Muffins

One-Month Muffins
4 cups mini shredded wheat biscuits, not frosted
4 cups bran flakes cereal
2 cups boiling water
3 cups sugar
3/4 cup solid vegetable shortening
4 eggs, slightly beaten
5 cups all-purpose flour
1 1/2 teaspoons salt
1 quart buttermilk
5 teaspoons baking soda

In a very large bowl add the shredded wheat and bran flakes. Add the boiling water and mix together. Let sit for 5 minutes so the cereal absorbs the water and breaks down. Add the remaining ingredients and mix well.. Put the batter in a container that seals tightly, such as an empty ice cream bucket, and refrigerate for up to one month. Be sure to write the date on the container.

To make muffins: Preheat oven to 375 degrees F. Grease muffin tin with cooking spray or line with muffin papers, also greased. Fill the muffin cups about 1/2 full and bake for 20 - 25 minutes or until a toothpick inserted in center comes out clean.
