Yellow Cake (homemade recipe)

Cake Pops by Bakerella has to be one of the cutest cookbooks out there. Once school is out, my baker daughter and I plan on making some adorable cake pops from this irresistible book. We already tried the Yellow Cake recipe and used it for tie-dye cupcakes, it was delicious. Go to Bakerella's website to get inspired and to purchase the cookbook.

Yellow Cake from Cake Pops by Bakerella

3 cups all-purpose flour (spooned and leveled)
2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter, art room temperature
2 cups sugar
4 eggs, at room temperature
2 teaspoons vanilla extract
1 cup milk, at room temperature

Preheat the oven to 350 degrees F. Grease and flour a 9-by-13 inch cake pan.

In a large bowl, whisk together flour, baking powder, and salt. Set aside.

Cream the butter and sugar with a mixer for 5 minutes, until light and fluffy.

Add the eggs, one at a time, to the creamed sugar and butter. mixing until just combined. Scrape down the sides of the bowl after each addition. Add the vanilla and mix until combined.

Add the flour mixture, a third time, alternating with the milk in two additions. (You'll begin and end with the flour mixture.)

Spread the batter (it will be thick) evenly into the prepared pan.

Bake for 35 - 40 minutes, or until a toothpick inserted in the center comes out clean.

Let the cake cool completely before crumbling for cake balls.
