Spinach Salad With Celery Seed And Bacon Dressing

6 slices bacon
3 hard-cooked eggs, sliced
6 scallions, chopped *
3/4 pound spinach, washed well **

1/4 cup plus 2 tablespoons cider vinegar
1/2 cup sugar
1  1/2 teaspoons horseradish mustard ***
1/2 teaspoon celery seeds
1/4 teaspoon freshly ground black pepper

In a medium skillet, saute the bacon until crisp. Drain on paper towels and when cool, cut into bite size pieces. Transfer to deep salad bowl. Top with the hard-cooked eggs and scallions. Remove the stems from the spinach and discard; tear some of the larger pieces into bite-sized ones. and place on top of scallions.

PREPARE THE DRESSING: To the bacon drippings (there should be about 1/4 cup) add the vinegar, sugar, mustard , celery seeds, and pepper and whisk until smooth. Bring to a boil to dissolve the sugar (the mixture will be quite foamy, then pour the hot dressing immediately over the spinach and toss. Top with a lid or plate and allow to stand for 5 minutes. Remove the lid and immediately transfer to individual salad plates and serve.

* I use about 1/2 cup diced onion
** 1 use one bag of spinach
*** I just add 1/8 teaspoon horseradish to my mustard
To double this I used 2 bags of spinach but I used the above recipe for the dressing and plus half the above recipe for the dressing. For example, the recipe calls for 1/2 cup of sugar. I used 1/2 cup of sugar plus 1/4 cup of sugar to get 1 plus 1/2 the amount for the dressing.
